Grilled Lamb Round Chops + Garlic Spinach

Serves 4  | Prep Time: 10 minutes | Cook Time: 15-20 minutes

 Round lamb chops come from the shoulder of the lamb. They’re less expensive than the loin chops. But equally as good. They do have a little more chew; go for a loin cut if you desire something more tender.

Ingredients

  •  4 lamb round chops (or 6 loin chops depending on size)
  • Kosher salt
  • Freshly ground black pepper
  • 1 tablespoon rosemary, minced
  • Extra virgin olive oil
  • 6 cloves garlic, sliced
  • 2 bunches spinach, washed
  • Serve with some steamed quinoa

Chef Tips

 The key to cooking spinach is high heat. You want to cook the spinach until it’s barley wilted. 

Preparation

Step 1

Season chops with salt, rosemary and drizzle a little olive oil over. Let marinate a few minutes. Preheat a grill pan or grill over medium-high heat. Grill on each side for about 3-4 minutes. Season with freshly ground black pepper and set aside to rest while you make the spinach.

Step 2

Sweat the garlic and olive oil in a large skillet over medium heat; until light golden brown. Turn heat up to high and add the spinach; season with salt. Stir the spinach occasionally; the residual water will help to cook down the spinach. Transfer to a platter and serve along side quinoa.
