White Bean-Artichoke Hummus
Serves 4 | Prep Time: 10 minutes | Cook Time: none (if using canned beans)
A health benefiting offering for a quick snack or gathering that you’ll guests will thank you for. Serve along side fresh raw veg and your favorite crackers.
Ingredients
- 1 14oz can white beans like cannelloni (or equivalent fresh)
- 1 14oz can artichokes, drained
- 2 cloves garlic
- 2 tablespoons tahini
- Juice of one fresh lemon
- 1 teaspoon apple cider vinegar
- 2 tablespoons extra virgin olive oil
- Kosher salt to taste
Chef Tips
Adding some freshly chopped dill and chives on top would make this dip really special. Use leftovers as a puree to serve along side roasted fish or meats.
Preparation
Step 1
Place the white beans, artichokes, garlic, tahini, lemon juice, cider vinegar, olive oil in a high speed blender (or food processor) and blend until smooth. Season with salt to taste. Store in a jar for up to 5 days…if it will last that long.
