Watermelon Salad

Typically I won’t make this until the heart of summer. But for some reason I had a watermelon at home. The feta gives a wonderful salinity to the dish. Eat it with the shrimp.
Ingredients
- 4 cups watermelon, cut into 1/2-inch cubes
- 1 cup black berries
- 1 tablespoon sherry vinegar
- Juice and zest of 1-2 limes
- 2 tablespoons (30g) extra virgin olive oil
- Salt and freshly ground black pepper
- A handful of cilantro and mint (torn)
- 3 oz feta, crumbled or sliced

Step 1
Toss the watermelon, black berries, sherry vinegar, lime (and zest), olive oil, salt and pepper. Place into a bowl and toss with the cilantro and mint
