Watermelmon Salad + Lime Vinaigrette

Serves 4  | Prep Time: 15 minutes | Cook Time: none

Cool, creamy, and refreshing. Another great summer salad with lots of colors and textures. Serve with some fresh grilled shrimp if you want to elevate this to more filling meal.

Ingredients

For the lime vinaigrette

  • juice of one lime
  • 2 teaspoons honey
  • 2-3 tablespoons (30-45g) extra virgin olive oil
  • salt and freshly ground black pepper

 

  • equal parts arugula and spinach (2 large handfuls each)
  • 1/4 red onion, diced or thinly sliced
  • 2 cups diced watermelon
  • 1 avocado, peeled, pitted and diced
  • 2 tablespoons pumpkin seeds (toasted if you like)
  • 1/2 cup mixed fresh herbs like mint, basil and cilantro

Chef Tips

Some cherry tomatoes would be great in here too.

Preparation

Step1 (for the lime vinaigrette)

Combine all the ingredients in a small bowl and whisk to combine. Season with salt and pepper. Taste for seasoning. If should be well balanced where the acid from the lime juice is playing in harmony with the sweetness of the honey and the fat of the olive oil. Alternatively, place all contents in a little jar and give a good shake.

 

Step 2 

Arrange the spinach and arugula on a rimmed platter. Arrange the red onion, watermelon, avocado, and feta all over. Sprinkles with pumpkin seeds and the herbs; I didn’t have any at the time of this photo, but the herbs would make a great impression. If you have any flaky salt. Season the avocado with it. Drizzle on the vinaigrette to your taste. Enjoy!
