Tricolore Salad + Tahini Ranch

Tricolore salad is a classic Italian style salad. I thought some creamy ‘ranch’ based sauce would work well here too. Serve with miso chicken for a great weeknight meal. I used kale here, but arugula works best for the peppery flavor.

Ingredients
- 1 head radicchio Treviso (the long headed one), chopped
- 2 heads endive
- 3-4 cups arugula
Tahini ranch
- 1/2 cup plain yogurt
- 1/3 cup olive oil
- 1 tablespoon fresh lemon juice
- 1-2 garlic cloves (micro planned)
- 1/4 teaspoon onion powder
- 3 tablespoons freshly chopped dill
- 3 tablespoons freshly chopped parsley
- A couple of turns of freshly ground black pepper
- 1 teaspoon Dijon mustard
- Kosher salt to taste

Chef Tips
This is a base preparation if you want a simple salad. You could add some radish, legumes, nuts/seeds, eggs and avocado for a fuller salad.

Preparation
Step 1 (for the tahini ranch)
Place all ingredients in a bowl and whisk to combine. Season with salt to taste. Taste and adjust. Maybe you want the garlic more prevalent or more acid.
Step 2
Combine all salad greens in a large bowl and few tablespoons of the ranch. Mix to evenly combine. Season with salt and freshly ground black pepper. Taste and adjust.
