Summer Tomato + Hard Boiled Eggs

Serves 4  | Prep Time: 5 minutes | Cook Time: 12 minutes

This was inspired by a friend of mine in Tennessee. It was so simple and seemed like such a great summery quick dish. If you need a refresher on cooking perfect hard boiled eggs

This is yummy with smoked salmon and sliced cucumbers or sauerkraut too.


  • 4 eggs; hard boiled, halved
  • 2-3 heirloom tomatoes; sliced about 1/2-inch thick
  • Extra virgi olive oil
  • Maldon salt and freshly ground black pepper
  • 1 -2 sprigs fresh dill

For the Dijon vinaigrette

  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon red wine vinegar
  • 1 clove garlic, minced (optional)
  • 1/2 teaspoon honey or maple syrup (optional, for sweetness)
  • Salt and pepper to taste

Chef Tips

This Dijon vinaigrette pairs wonderfully with various salads, grilled vegetables, and even as a marinade for chicken or fish. It’s versatile and easy to make, adding a burst of flavor to your favorite dishes. Enjoy!


  1. In a small bowl, combine the Dijon mustard, red wine vinegar, minced garlic (if using), and honey or maple syrup (if using). Whisk these ingredients together until well combined. Slowly drizzle the extra-virgin olive oil into the bowl while whisking continuously. The oil should emulsify with the other ingredients to create a smooth and creamy dressing. Continue whisking until the vinaigrette is fully blended and slightly thickened.
  2. Taste the vinaigrette and season with salt and pepper to your preference. Adjust the flavors as needed, adding more mustard for tanginess or honey/maple syrup for sweetness.
  3. Once you’re satisfied with the taste, transfer the Dijon vinaigrette to a jar or airtight container for storage.
  4. Shake the container well before each use to ensure the ingredients are well-mixed.
  5. On a plate lay out some tomatoes and season with olive oil, maldon salt and freshly ground black pepper.
  6. Place some eggs around and drizzle some Dijon vinaigrette. Sprinkle on some dill and eat right away.
