Stir-fried Beef + Crispy Garlic, Broccoli and Peanuts
Serves 4 | Prep Time: 20 minutes | Cook Time: 15 minutes
This was the first home cooked meal I got to cook for my family after a long move and I didn’t want to think too much; I just wanted to get the girls some real food after a long road trip. The fish sauce, lime juice and cilantro give this humble dish a really quick Thai flavor profile.
Ingredients
- Extra virgin olive oil
- 1 head broccoli, cut into bite size florets
- 2 pounds ground grass fed beef
- 1 onion
- 1 jalapeño
- 2 tablespoons fish sauce
- 2-3 tablespoons lime juice (from 1-2 limes)
- 1 bunch cilantro, roughly chopped
- Crispy garlic oil
- 1/2 cup chopped peanuts
- To serve: cooked black or brown rice
For the crispy garlic oil
- 1/2 cup extra virgin olive oil
- 6 cloves garlic, thinly sliced
- 1 teaspoon Aleppo pepper
- 1 teaspoon Urfa chili
- Pinch of Koser salt
- 1 teaspoon fresh thyme (optional)
Chef Tips
You can skip the crispy garlic (if you’re short on time) and add just the garlic in with the onions in step 4.
Preparation
Step 1
Preheat oven to 450F. Toss broccoli with a little olive oil and season with salt. Roast on a parchment lined baking tray until golden brown; but not mushy. About 8-10 minutes.
Step 2 (for the crispy garlic oil)
Place olive oil and garlic in a small sauce pot. Heat slowly over medium heat; stirring occasionally until the garlic is light golden brown. About 5 minutes. Remove from the heat; using a slotted spoon remove the garlic and place into a bowl to cool. Add in the two peppers, salt and thyme (if using). Store in glass jar. This will last weeks in a cool dark spot.
Step 3
Heat a Dutch oven over medium-high heat. Add a tablespoon of oil and the ground beef. Season with salt. Break up the meat with a wooden spoon until. Cook until most of the moisture has evaporated. Transfer to a bowl
Step 4
Add a little olive oil along with the onions and jalapeño back into the pot. Cook over medium heat until soft and translucent; 5-6 minutes. Add in the ground beef along with the broccoli, fish sauce and lime juice. Season with some freshly ground black pepper. Add in the cilantro and a couple tablespoons of the crispy garlic. Serve with rice.
