Stir Fried Asparagus

Asparagus in the markets is one of those signs that our seasons are about to change. What better way than to celebrate with this simple preparation. Use any kind of herbs or none at all. Lemon juice and olive oil make this magical vegetable delicious all the time.
Ingredients
- Extra virgin olive oil
- 2 bunch asparagus
- Kosher salt to taste
- 2 cloves garlic, minced
- 1 jalapeño, mince (your choice with or without seeds)
- Squeeze of some fresh lemon juice
- Fresh tarragon, about 3-4 sprigs stripped from the stems
Chef Tips
Look for firm, crisp stems when picking asparagus. Cook with in one to two days for maximum freshness.
Preparation
Step 1
Heat a sauté pan over medium-high heat. Add a few plugs of olive oil and toss in the asparagus. Sauté the asparagus for about 1 minute; stirring or shaking the asparagus in the pan. Season with salt
Step 2
Add the minced garlic and jalapeño; cook for about another minute. Don’t forget to use your senses here; if the pan looks a little dry add a little more oil. Taste a piece of asparagus – is it tender or does it need to cook a little longer? Check your heat level too.
Step 3
Off the heat, spritz with some fresh lemon juice and toss in the tarragon.
