Spiced Pear & Brazil Nut Milk Smoothie

Serves 4  | Ready in 10 minutes (plus soaking time)

Here’s a healthy and delicious fall-winter beverage minus all the crap in most spiced drinks. Brazil nuts contain healthy fats and selenium.

For the Brazil nut milk:

  • 1 cup Brazil nuts
  • 5 cups filtered water

For the Smoothie:

  • 2 cups chopped pears (freeze before blending)
  • 1 teaspoon of alcohol-free vanilla extract
  • 1 rounded tablespoon pumpkin pie spice mix
  • *For a sweeter option, add 1-2 dates.

Chef Tips

Freeze pears and soak nuts the night before (this works with other nuts too).

If you’re not going to be using pumpkin pie spice mix for the rest of the year, cinnamon and some freshly ground nutmeg is just as delicious.

Step 1 (for the Brazil nut milk)

Soak Brazil nuts overnight in water (just until covered) for a minimum of 8 hours. Drain the water, rinse the nuts well. This helps tenderize the nuts so you get a nice smooth milk.

Step 2

Place the Brazil nuts in a blender and add 3 cups of filtered water.  Blend for 45 seconds (until smooth) and then strain the liquid through a fine mesh strainer. Place in the fridge to keep cool.

Step 3

In a blender, combine the milk, chilled pears, vanilla, spice mix, and dates (if using). Blend on high speed for 45 seconds, until smooth and creamy.

Serve immediately.
