Smoked Trout Salad + Citrus, Avocado and Miso Ranch
Serves 4 | Prep Time: 20 minutes | Cook Time: none (if using fresh trout/salmon add 12-15 minutes)
Lot’s of healthy fats and a zesty take on traditional ranch in this dish. Absolutely use fresh trout or salmon if smoke like flavors don’t meet your palate.
Ingredients
Miso ranch
- 2 garlic cloves, finely minced
- 250g plain greek yogurt (sub coconut yogurt)
- 25g lemon juice (about the juice of 1 lemon)
- 3g onion powder
- 3g garlic powder
- 1/2 bunch chives, minced
- 60g miso paste
- Salt and pepper to taste
- 1 pound smoked trout (or salmon), flaked
- 2 cara cara oranges, skin removed, and sliced into 1/4-inch halves
- Mixed greens; like equal parts arugula, baby kale and spinach
- 2 avocados, diced
- To serve: toasted seeds or nuts (like pumpkin seeds or almonds)
Chef Tips
Citrus can be as varied as you would like; grapefruit, orange, pomelo etc.
Preparation
Step 1 (for the miso ranch)
Combine all ingredients in a bowl and whisk until combined. Taste to your enjoyment.
Step 2
Add greens into a large bowl. Dress with a little miso ranch. Season with salt and pepper. Mix to combine. Fold in the trout, oranges, and avocado. Serve family style and sprinkle with seeds and nuts (or both).
