Sauteed Kale + Butternut Squash

Serves 4  | Prep Time: 10 minutes | Cook Time: 20 minutes

A great winter dish chock full of fiber and potassium and other essential nutrients.


  • Olive oil
  • 1 butternut squash
  • 1 bunch lacinato kale
  • 1 cup vegetable or chicken broth
  • 1 tablespoon whole grain mustard
  • Kosher salt and freshly ground pepper to taste

Chef Tips


Step 1

Heat a dutch oven over medium heat. Add some olive and the squash and season with salt until beginning to soften and some caramelization develops; about 10-12 minutes

Step 2

Add the kale broth, mustard and some more salt and pepper to taste. Cook stirring occasionally until the broth is reduced by about half and the vegetables are tender. Drizzle with some extra olive oil is desired.
