Roasted Carrot Hummus

Serves 4  | Prep Time: 5 minutes | Cook Time: 15 minutes

 I always like to keep hummus on hand to avoid food emergencies. Blending in roasted carrots provides great color, added nutrition and taste to mix things up.


  •  1 bunch carrots, cleaned and halved (feel free to leave unpeeled if the carrots are are the younger side)
  • Extra virgin olive oil
  • Kosher salt to taste
  • 1 pint store bought hummus (or homemade)
  • Fresh lemon juice (from 1 lemon)
  • Serve with raw veggies and seeded crackers

Chef Tips

Consider serving the hummus warm with roasted meats, fish or veggies.


Step 1

Preheat oven to 425. Line a tray with parchment paper. Drizzle with some olive oil and season with salt. Roast until tender and evenly browned. About 15 minutesRemove and allow to cool slightly,.

Step 2

Roughly chop the carrots and place into a food processor with the hummus and blend until smooth. Season with fresh lemon juice and salt to taste.
