Roasted Brussels Sprouts + Lemon, Black Pepper and Parmesan

Ingredients
- 2 pounds Brussels sprouts; bottoms trimmed
- 3 tablespoons extra virgin olive oil
- Salt and freshly ground black pepper
- Zest and juice of one lemon
A block of parmesan

Any leftovers are good tossed in grain bowls or fried rice.
Preparation
Step 1
Preheat oven to 450F.
In a bowl, toss the Brussels with olive oil and season with salt and pepper. Spread out onto a single layer of a parchment lined sheet tray. Roast in the oven for about 20 minutes or until tender and golden brown.
Step
Immediately zest the lemon with a microphone and then give a good squeeze of the juice all over. Generously grate parmesan all over to your taste.
