Serves 4 | Prep Time: 10 minutes | Cook Time: 10 minutes
Not only does cabbage come with impressive health benefits, it’s also beautiful and tasty. The sweet and sour notes along with the crunch of walnuts make this texturally pleasing to eat.
Ingredients
- 1 head purple cabbage, halved and cored
- Kosher salt
- 2 tablespoons honey
- 3 tablespoons balsamic vinegar
- 3 tablespoons extra virgin olive oil
- Pinch red chili flakes
- 1 tablespoon fresh thyme leaves if you have
- Some toasted and chopped walnuts
- A handful of crumbled feta
Chef Tips
If you’re dairy averse or just can’t have dairy just omit the feta.
Preparation
Step 1
Cut the cabbage (you should have two halves) in 1/4-inc slices. Preheat a cast iron pan over medium high heat. Add about a tablespoon of olive oil and the cabbage to the pan. Season with salt. Sauté for about 5-6 minutes; stirring occasionally. Lower the head to medium the pan is getting too hot.
Step 2
While the cabbage is cooking mix together the honey, balsamic, olive oil, chili flakes and thyme (if using). Pour into pan and bring to a boil. Cook until the mixture is a bit syrupy and the cabbage looks nice bright. About 1 minute. Sprinkle on the walnuts and feta.
