Nut Butter Fudge + Crispy Quinoa
Serves 4 | Prep Time: 10 minutes (plus freezing time) | Cook Time: none
If you’re always looking to have a healthy treat ready to go, look no further. The crispy feels just like rice crispies! Proof that ‘sweets’ can have way more value than we think.
Ingredients
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1/4 cup of pure maple syrup
- 1/2 cup raw cacao powder
- 1/4 cup nut butter (this works with non-nut butters too, like sunflower seed butter)
- 2 tablespoons puffed quinoa (optional)
- Optional Mix Ins: dried berries, chopped nuts
Chef Tips
Swap in half the amount of of cacao for protein powder if you’re looking to add additional protein.
Preparation
Step 1 (for the crispy quinoa)
Add the quinoa to a skillet and place over medium heat. Toast the quinoa for about 2 minutes, stirring occasionally. It will begin popping when it’s toasted. As soon as it does place into a bowl and allow to cool.
Step 2
Whisk together cacao, maple syrup, melted coconut oil and vanilla in a bowl until well combined. Add in your nut butter and mix through.
Step 4
Add quinoa and mix ins, if using, and fold through.
Step 5
Pour chocolate mixture into a lined tray or freeze safe container.
Step 6
Place in the freezer for 1 hr or until set.
Step 7
Remove from the freezer, and cut or break into pieces to enjoy. Store in freezer.
