Miso Chicken
Serves 4 | Prep time: 5 minutes | Cook time: 30-35 minutes
Miso is one of those amazing flavor bombs that amplifies just about anything. Make the Smashed Cucumbers while the chicken is cooking.
Ingredients
- 4 tablespoons butter, room temperature (or olive oil)
- ½ cup miso
- 2 tablespoons honey
- 1 tablespoon rice wine vinegar
- 8 bone in chicken thighs (or boneless)
- To serve: steamed rice
Chef Tips
The miso marinade can be used for a variety of things: turnips, potatoes, beef, fish!
Preparation
Step 1
Heat oven to 425 degrees. Combine olive oil, miso, honey, rice vinegar and black pepper in a food processor until well combined. Alternatively whisk in a bowl.
Step 2
Add chicken to the bowl and massage the miso mixture all over it. Place the chicken in a single layer in a roasting pan and slide it into the oven. Roast for 30-35 minutes, turning the chicken pieces over once or twice, until the skin is golden brown and crisp, and the internal temperature of the meat is 160 to 165 degrees.
