Melon + Cucumber and Feta Salad

Serves 4  | Prep Time: 10 minutes | Cook Time: none

A simple everyday summer side dish with lot’s of refreshing flavors


  • 1 cantaloupe; deseeded, cut into wedges, ribs removed and thinly sliced lengthwise
  • 1 medium cucumber, peeled into thin strips using your peeler, or halved and thinly sliced
  • 1/4 of a red onion, thinly sliced
  • 4-5 breakfast radishes, washed and thinly sliced
  • 2 tablespoons, torn mint
  • A pinch of red pepper flakes
  • 1/4 (70g) feta
  • 1 tablespoon sherry vinegar (or white wine vinegar)
  • 2 tablespoons extra virgin olive oil
  • Pinch of salt and and some freshly ground black pepper

Chef Tips

If you need an egg substitute or you don’t have eggs; mix together one 1 tablespoon of ground flaxseed with 2.5 tablespoons of water per egg.


Toss all ingredients gently together. Serve right away. Left overs will be good for one more day; if any.
