Melon + Cucumber and Feta Salad

A simple everyday summer side dish with lot’s of refreshing flavors
Ingredients
- 1 cantaloupe; deseeded, cut into wedges, ribs removed and thinly sliced lengthwise
- 1 medium cucumber, peeled into thin strips using your peeler, or halved and thinly sliced
- 1/4 of a red onion, thinly sliced
- 4-5 breakfast radishes, washed and thinly sliced
- 2 tablespoons, torn mint
- A pinch of red pepper flakes
- 1/4 (70g) feta
- 1 tablespoon sherry vinegar (or white wine vinegar)
- 2 tablespoons extra virgin olive oil
- Pinch of salt and and some freshly ground black pepper
Chef Tips
If you need an egg substitute or you don’t have eggs; mix together one 1 tablespoon of ground flaxseed with 2.5 tablespoons of water per egg.
Preparation
Toss all ingredients gently together. Serve right away. Left overs will be good for one more day; if any.
