Lemony Roasted Fennel + Feta
Serves 4 | Prep Time: 10 minutes | Cook Time: 20 minutes
This is a versatile side to pair with just about anything.
Ingredients
- 2 heads fennel (fronds reserved)
- Extra virgin olive oil
- Kosher salt and freshly ground black pepper
- 2 cloves garlic
- Juice and zest of one lemon
- Extra virgin olive oil
- Feta
Chef Tips
This would be wonderful the the addition of chili flakes and fresh oregano
Preparation
Step 1
Preheat oven to 400F. Cut fennel into 6ths or 8ths depending on size. Toss with olive oil salt and pepper. Lay out on a single layer and roast until tender; about 15-20 minutes.
Step 2
Combine the garlic, some chopped fennel fronds, lemon juice and zest in a bowl. Add in a few tablespoons of olive oil. Season with salt to taste.
Step 3
Place fennel on a rimmed platter. Drizzle over some of the lemon vinaigrette and tops with feta.
