Lamb Chops + Garlic and Olive Oil

Serves 4  | Prep Time: 10 minutes | Cook Time: 15 minutes

A beautiful and simple lamb preparation.


  • 6 tablespoons olive oil
  • 2 cloves garlic, minced
  • Kosher and salt and freshly ground black pepper
  • 8 lamb rib chops, about 1 inch thick (about 2 3/4 pounds in all)

Chef Tips

If lamb loin chops look good you can substitute those as well. Some fresh chopped rosemary would be nice in the garlic and olive oil mix as well.


Step 1

Light the grill (or grill pan) or heat the broiler. In a shallow dish, combine 4 tablespoons of the oil with the garlic, salt, and pepper. Add the lamb chops and turn to coat.


Step 2

Grill over high heat or broil the lamb chops for 5 minutes, basting with the remaining 2 tablespoons oil. Turn and cook until done, about 5 minutes longer.
