Guajillo Spiced Steak tacos + Quick Marinated Cabbage
Serves 4 | Prep Time: 20 minutes | Cook Time: 35-40 minutes
Tacos have to be one of my favorites dishes. This is just one of thousands of ways to have a taco.

Ingredients
For the guajillo steak
- 1 pound skirt steak, or hanger steak
- 1 tablespoon coriander seeds
- 1 tablespoon cumin seeds
- 6 guajillo chiles, seeds and stems removed
- 2 tsp. unsweetened cocoa powder
- 1¼ tsp. ground cinnamon
- 1 tablespoon mustard powder (like Colemans)
- 1 tsp. ground allspice
- 1 tsp. ground coffee
For the quick marinated cabbage
- 1/2 red cabbage, core removed and thinly sliced
- Kosher salt
- 2 tablespoons apple cider vinegar
- To serve: toasted corn tortillas (for a grain free version try Siete) and slice avocado
For the tomatillo salsa
- 1/3 pound tomatillos, husked and rinsed
- 1/2 white onion,
- 1 clove garlic, skin left on
- 1 jalapeño, stem removed
- 1/2 bunch cilantro (with the stems)
- Kosher salt to taste

Chef Tips
You can always replace the guajillo chiles with chile powder, to save you time.

Preparation
Step 1 (for the guajillo steak)
Toast coriander seeds, cumin seeds, in a dry small skillet over medium heat, tossing occasionally, until very fragrant and just beginning to darken, about 5 minutes. Transfer to a plate; let cool. Finely grind in spice mill or with mortar and pestle; transfer to a bowl. Finely grind guajillo chiles. Add to the ground spices.
Season steak all over with salt. Season aggressively with the spice mixture; you’ll have leftover.
Step 2 (for the tomatillo salsa)
Preheat oven to 425F. Place all ingredients on a baking tray or dry cast iron pan, Roast for about 15 minutes.; or just until the tomatillos soften. Place in a blender with the cilantro and blend until somewhat smooth. Season to taste with salt.
Step 3 (for the quick marinated cabbage)
Toss all ingredients in a bowl and allow to marinated for about 10 minutes.
Step 4
Once you have all your items ready to go, grill or sear the steak to your desired taste. Allow to rest for a few minutes. And dice into even bite size pieces. Serve along side the tortillas, cabbage, salsa and avocado.
