Grilled Shiitake Mushrooms + Chile and Thyme
Serves 4 | Prep Time: 10-15 minutes | Cook Time: 5 minutes
This is for those who love mushrooms. Serve as a side or make it into a meal with a grain and some roasted vegetable of you choice.

Ingredients
- 1 1/2 pounds (680g) shiitake mushrooms, stems removed
- 1⁄2 cup olive oil
3 tablespoons fresh thyme leaves
2 serrano chiles, stemmed and thinly sliced - Kosher salt + freshly ground black pepper
- To serve: lemon wedges and flaky sea salt

Chef Tips
Oyster, portobello or any other mushroom work for this dish. Use jalapeños for some more mild heat.

Preparation
Step 1
Build a medium-heat fire in a charcoal grill, or heat a cast-iron grill pan over medium. In a large bowl, toss the mushrooms with the olive oil, half the thyme and chiles until evenly coated. Season with kosher salt and black pepper and then remove the mushrooms from the oil. Grill the mushrooms, flipping once, until lightly charred and tender, about 3 minutes.
Step 2
Return the mushrooms to the bowl of oil and chiles and toss again with the rest of the thyme until evenly coated. Spread out the mushrooms on a serving platter with lemon wedges and sprinkle with sea salt before serving.
