Grilled Peaches + Green Beans, Almond & Burrata
Serves 4 | Prep Time: 10 minutes | Cook Time: 10 minutes
Just about anything goes well with burrata. The addition of green beans, sweet peach and crunchy almonds makes for a timeless combination. This is adapted from the BouroughChef.
Ingredients
- 4 ripe peaches, halved and cut into 6 wedges each
- 1/2 pound green beans, trimmed
- 1 ball burrata
- 2 tablespoons, sliced almonds
- A few sprigs of thyme
- 1 teaspoon white wine vinegar (or apple cider)
- Extra virgin olive oil
- Kosher salt and freshly ground black pepper
Chef Tips
If you need to make this dairy free, make a little tahini sauce with tahini, garlic, lemon juice and olive oil. This will provide the same intention as the burrata; creaminess.
Preparation
Step 1
Toast the almonds over low heat in a dry pan until golden. Set aside to cool.
Step 2
Cook green beans in some boiling salted water until tender. About 4 minutes. Drain and refresh in cold or ice water.
Step 3
Toss peaches with a little olive oil and grill until slightly charred.
Step 4
Mix the green beans with olive oil, salt and pepper to taste and the vinegar
Step 5
Mix the peaches, green beans, and thyme. Top with the burrata and almonds.
