Grilled Oyster Mushrooms
Serves 4 | Prep Time: 10 minutes | Cook Time: 10 minutes
Simple and quick and delicious. Mushrooms are one of my favorite foods that satisfy. Plus they contain those amazing elements (antioxidants) that help us fight off our enemies.
Ingredients
- 2 pounds oyster mushrooms, quartered
- 2 stalks green onions, thinly sliced
- 1 clove garlic, micro planned
- 2 tablespoons good soy sauce (or gluten free tamari)
- 1 tablespoon, sherry or balsamic vinegar
- 2 tablespoons sesame oil
- Fresh lemon
Chef Tips
Save time and use miso ranch from the Brown Rice Grain Bowl + Roasted Kale, Broccoli in place of the soy vinaigrette.
Preparation
Step 1
Preheat a grill pan over medium high heat. Place the cut mushrooms on a baking tray and drizzle with olive oil. Sear in the pan and grill just like you would a piece of meat. Place in a bowl and set aside
Step 2
Mix together the onions, garlic, soy sauce, vinegar, sesame oil. Add a little of the dressing the mushroom and season with freshly ground pepper. Give the mush a little toss so it bathes in the vinaigrette. Serve family style with some fresh lemon.
