Grilled Asparagus + Aged Gouda, Bread Crumbs and Lemon

Serves 4 | Prep Time: 5 minutes | Cook Time: 10 minutes

March is always a favorite month of mine because asparagus becomes a staple in my shopping cart. It’s packed with prebiotics and it’s quick and easy to prepare. This one is bright from the lemon and the saltiness of little gouda adds complexity to such a magnificent vegetable.

Ingredients

  • 2 bunches asparagus, bottom ends trimmed
  • Olive oil
  • Salt to taste
  • 1 block aged gouda
  • 1 lemon, halved

Chef Tips

If for whatever reason you don’t have leftover bread, skip the bread crumbs and add some toasted walnuts. Bread crumbs are best made by making crostini then grinding them in a food processor.

Preparation

Step 1

Preheat a grill or grill pan over medium-high heat. Drizzle asparagus with some olive oil to coat and season with salt. Grill until nice and charred on one side and turn to finish cooking through; about 5-6 minutes.

Step 2

Place asparagus onto a plate and squeeze on some lemon juice. Grate some gouda all over and finish with a nice sprinkling of bread crumbs. Serve immediately.
