Greek Chicken Souvlaki

Greek Chicken Souvlaki

Serves 4  | Prep Time: 20 minutes | Cook Time: 30 minutes

A classic Mediterranean street food dish perfect for home cooking. A little bowl of marniated olives and beans would be yummy too (look for these in the prepared deli section).

Ingredients

  • 4 boneless skinless chicken breastscut into 1 ½-inch cubes (feel free to use thigh meat too)
  •  cup olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlicminced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

For the tzatziki:

  • ½ cup greek yogurt
  • 2 tablespoons extra virgin olive oil
  • 1 garlic clove minced
  • 1 tablespoon minced dill
  • ½ cup finely chopped cucumber 
  • 1 tablespoon freshly squeezed lemon juice
  • ½ teaspoon distilled white vinegar
  • ¼ teaspoon Kosher salt

To serve: sliced cucumber, tomato and red onion

Use bamboo or reusable metal skewers

Preparation

Step 1

Add the chicken, oil, lemon juice, garlic, oregano, parsley, salt, and pepper to a large mixing bowl. Stir together. Place the bowl in the refrigerator and marinate for at least 30 minutes.

Step 2; Make the Easy Tzatziki:

Meanwhile, in a small bowl, combine the yogurt, olive oil, garlic, dill, cucumber, lemon juice, vinegar and salt. Stir to combine and set aside until ready to serve. This keeps well in the refrigerator for up to 6 days.

Step 3
Heat the grill on medium-high heat. Then thread the marinated chicken pieces onto skewers (about 8 to 9 pieces per skewer makes 6 skewers).

Step 4

Cook the skewers on the grill for 3 to 4 minutes on each side.

Serve with the tzatziki, cucumber, tomato and red onions
