Glass Noodles
Serves 4 | Prep Time: 15 minutes | Cook Time: 5
These noodles come together quickly and make a great lunch the next day. Add proteins like pan seared salmon or nice grilled pork chops should you need.

Ingredients
- 2 bundles glass noodles
- 1 cup daikon, cut into matchsticks
- 1 cup cucumber (from about 2 Persian cucumbers), cut into matchsticks
- Nuoc chom (see below)
- Broccoli sprouts
- To garnish: nigella or sesame seed (black / or white)
For the nuoc chom
- 1/4 cup fish sauce
- 2 tablespoons coconut sugar
- 1/2 cup water
- 3 tablespoons (45g) lime juice
- 2 garlic cloves, micro planned
1 thai chile, finely minced

Chef Tips
Usually the noodles come in 3 bundles. Two bundles is usually sufficient for four people.

Preparation
Bring a large pot of water to a boil. Cook according to the package. Drain and rinse with cold water.
Step 2 (nuoc chom)
Combine all the ingredients. Stir to combine until the coconut sugar is dissolved.
Step 3
In a large bowl combine the noodles, daikon, cucumber and a few tablespoons of the nuoc cham. Toss and taste. Add more sauce if desired. Sprinkle on a pinch of nigella or sesame seeds.
