Easy Chocolate Avocado Pudding

Avocado provides fat and fiber. Essential tools to controlling portion size and getting nutrition into desserts. Trust me, this is really good and really ‘easy’ to make. Mix up toppings as you move around the year. Try cherries, plums and berries for this time of the year. Pears and pomegranates for the colder days.
Ingredients
- 2 ripe medium (or 1 large ripe) avocados, pits removed
- 4 tablespoons cacao powder
- 1 tablespoon hemp seeds (or any protein powder), optional
- 1/2 cup almond milk (or any milk of your choice)
- 4 tablespoons pure maple syrup (or date syrup)
- 1 teaspoon vanilla extract
- Pinch of himalayan pink salt (or sea salt)
ADD ONS (optional): pomegranate seeds or any seasonal fruit you enjoy, cacao nibs,
dates, toasted almonds, coconut whipped cream or full fat heavy cream or sour cream

Preparation
Step 1
Combine all ingredients in a blender or a food processor and blend until smooth,
scraping down the sides in between. Add more almond milk if needed to help blend.
Step 2
Taste test it to see if you prefer more chocolate flavor (add more cacao powder, 1
tablespoon at a time), more sweetness (add a splash of maple syrup) or more vanilla.
Blend until smooth.
Step 3
Transfer to an airtight container for storing. Refrigerate for up to 4 days. Serve chilled
with your favorite toppings.
