This carrot-ginger dressing is typical in homemade Japanese cooking. Serve simply in this crunchy salad or as a condiment to a piece of grilled chicken or other vegetables.

For the carrot-ginger dressing

  • 1 small carrot
  • 1-1inch piece of ginger, coarsely chopped

  • 2 teaspoons tamari (or soy sauce)
  • 1 teaspoon onion powder
  • 2-3 tablespoons of water
  • 1/4 cup (125ml) extra virgin olive oil
  • Kosher salt and freshly ground black pepper

For the salad

  • 6-8 cups of crunchy greens like: little gems, romaine
  • 1/4 cup of fresh mint
