Crunchy Greens + Carrot-Ginger Dressing

This carrot-ginger dressing is typical in homemade Japanese cooking. Serve simply in this crunchy salad or as a condiment to a piece of grilled chicken or other vegetables.
Ingredients
For the carrot-ginger dressing
- 1 small carrot
- 1-1inch piece of ginger, coarsely chopped
- 2 tablespoons (30g) rice wine vinegar (champagne vinegar would work well too)
- 2 teaspoons tamari (or soy sauce)
- 1 teaspoon onion powder
- 2-3 tablespoons of water
- 1/4 cup (125ml) extra virgin olive oil
- Kosher salt and freshly ground black pepper
For the salad
- 6-8 cups of crunchy greens like: little gems, romaine
- 1/4 cup of fresh mint
Chef Tips
For some more added texture, try sprinkling on some toasted sesame or some toasted hazelnuts.
Preparation
Step 1 (for the carrot-ginger dressing)
Place all contents in a food processor/or blender and blend until you get a nice creamy texture. Taste of for seasoning
Step 2
Place greens in a large mixing bowl. Drizzle on some dressing and season with salt and pepper to taste. Toss and taste for seasoning. Spoon on some more dressing and garnish with some mint.
