Creamy Chickpea Lemon Soup

Serves 4  | Prep Time: 10 minutes | Cook Time: 20 minutes

This is a nice pantry dinner that’s clean and delicious. Of course if you have your own veg or chicken stock this is even better.


  • 1 yellow onion
  • 4 carrots
  • About ¼ cup extra virgin olive oil
  • 6 garlic cloves
  • 12 cups veggie broth
  • 1 cup jasmine rice
  • 1, 15oz can chickpeas
  • ½ cup tahini
  • Zest and juice of 2 lemons
  • 4 cups fresh spinach (about 2 bunches), roughly chopped
  • Salt and pepper to taste

Chef Tips


Step 1

Saute the onion and carrot in olive oil for about 5 minutes; season with salt. Add the garlic and cook another 2 minutes.

Step 2

Add the veggie broth, rice and chickpeas. Cook until the rice is ready; about 12-15 minutes.

Step 3

Stir in the tahini, lemon zest/juice, chopped spinach. Add more lemon juice if desired. Season with salt and pepper. Enjoy
