Cowboy Caviar

Serves 6 | Prep Time: 20 minutes | Cook Time: none

This rainbow colored bright and tangy salad is perfect for a light meal on its own or served along side your favorite protein. There are many different stories attributed to the name, but mainly it pays homage to all the staple crops of the regions. Goes wonderfully with the Grilled Pork Chops + Garlic Lime Sauce.


  • 2 red bell peppers, diced
  • 1 red onion diced / any onion will work
  • 1 peach, diced
  • 28 oz cooked black beans
  • 1 avocado, halved, pitted and diced
  • 1/2 cup chopped cilantro
  • Kosher salt and freshly ground black pepper
  • Lime chili dressing (see below)
  • 1/2 cup cotija cheese, crumbled (optional)

For the dressing

  • ½ cup extra virgin olive oil
  • 3 cloves garlic
  • 1 tsp anchovy paste
  • ¼ cup freshly squeezed lime juice
  • ½ tsp crushed red pepper flakes (or ¼ cayenne pepper)
  • ½ tsp paprika
  • 1 tsp chili powder
  • ½ tsp dried oregano
  • Salt and pepper to taste


Chef Tips


Step 1 (make the dressing)

Using an immersion blender or high powered blender, add all of your dressing ingredients and blend until smooth. Set aside. This keeps well in the fridge for up to 7 days in the fridge. S

Step 2

Place all ingredients in a bowl.  Add a few spoonfuls of the dressing, season with salt and freshly ground black pepper. Mix well and taste. Adjust with more dressing or salt to taste.
