Chipotle Almond Dip
Serves 6 | Prep Time: 5-7 minutes | Cook Time: none
Lightly smoky from the chipotle and nutty, this dip will surprise you…in a wonderful way. Try with your favorite dip vehicles or use as a sauce for grilled beef, chicken or shrimp.
Ingredients
- ¾ cup filtered water
- ⅔ cup olive oil
- Juice of a lemon
- 1 cup sprouted almonds (or pumpkin seeds)
- ¼ cup nutritional yeast
- 4 garlic cloves
- Salt to taste
- ½ teaspoon ground cumin
- ½ teaspoon chili powder
- ½ teaspoon smoked paprika
- 1-2 chipotles in adobo (look for in the latin section of your store)
Chef Tips
If you don’t have sprouted nuts or seeds you can use raw if that works for you. I like to lightly toast mine; 350F for about 10 minutes depending on the strength of your oven.
Preparation
Preparation:
Place all ingredients in a food processor or blender and blend until smooth. About a good 3-4 minutes. You want to break the nuts down. If it looks too thick to you, add a little more water. Taste for seasoning and adjust.
