Serves 4 | Prep Time: 5 minutes | Cook Time: 10 minutes
Tortellini in broth is one of those magical Italian soups that looks too simple; but is incredibly delicious. Yes, making a great broth takes some time. And if you can do it, do it. I’ve offered you the version that considers your busy schedule.
.
Ingredients
- 2 quart bone broth (I like Kettle and Fire)
- 1 cup tomato sauce
- Salt and freshly ground black pepper
- 1 bunch kale, thinly sliced (or other dark leafy greens)
- 1 pack tortellini
- Squeeze of fresh lemon juice
- Freshly grated parmesan (optional)
Chef Tips
Ravioli or any other fresh dumpling in your prepared good section of your store will work.
Preparation
Step 1
Combine broth and tomato sauce in a large sauce pot. Bring to a simmer; season with salt and freshly ground black pepper. Add in the kale and cook for a few minutes until cooked. Gently cook the tortellini in the broth; about 1 minute. Season with a squeeze of lemon juice and parmesan if desired.
