Broiled Mackerel + Grilled Oyster Mushrooms
Serves 4 | Prep Time: 15 minutes | Cook Time: 20 minutes (including rice)
I found this wonderful wild mackerel in the freezer section of the meat department while waiting for my number to be called. The pepperiness of the watercress and lightly pickled onions help to cut through the richness of the fish. Pair with the oyster mushrooms.
Ingredients
- 1/2 white/or red onion, thinly sliced
- Some vinegar like white or white wine vinegar
- 4 wild mackerel fillets or fresh wild fish
- 1 bunch water cress
- To serve: grilled oyster mushrooms (see recipe on home page) and steamed rice of your choice
Chef Tips
If you’re averse to onions skip it or use thinly sliced vegetable (like carrots) for a quick pickle. Or some good old fresh lemon juice.
Preparation
Step 1
Season the onions with salt and about tablespoons of vinegar. Mix and stir Allow to while you prepare the fish.
Step 2
Preheat the broiler (this means 500F) with the rack 3/4s to the top. Line a baking tray with parchment or foil to make clean up easy.
Step 3
There will be some rib bones that need to be fillet and removed. Season with salt on both sides and place skin side up on the baking tray. Place under the broiler until he skin is light golden brown; about 5 minutes.
Step 4
Place the fish on a nice platter stop with a handful of picked watercress leaves and some pickled onions. Serve with rice and mushrooms.
