Broad Bean, Red Onion + Caper Salad
Serves 4 | Prep Time: 15 minutes | Cook Time: 5 minutes
Packed with fiber and protein. Broad beans (aka fava beans) are a good alternative to other beans you may be accustomed too. I encourage you to get the fresh ones during the early and late parts of the spring.

Ingredients
- 1 red onion
- 2, 15.5oz cans broad beans (or any legume you choose)
- 2 cups baby tomatoes, halved
- 2 tablespoons mint, chopped
- 2 tablespoons dill, chopped
- 1 tablespoon sherry vinegar or fresh lemon juice
- 1 tablespoon capers
- Salt and freshly ground black pepper

Preparation
Step 1
Begin by lightly boiling the beans in a pan of salted boiling water, they should take around 3 minutes to cook. Once tender, remove from the heat, drain and then run under cold water to cool them down.
Step 2
Next, prepare the onions and tomatoes and adding them to a mixing bowl along with the remaining ingredients. Add in the cooled beans and then give everything a good stir to combine all the flavors.
Step 3
Taste for seasoning before adding salt and pepper as the capers can be quite salty.
Step 4
Delicious as a side salad or maybe on some toasted sourdough.
