Braised Carrots + Orange and Turmeric
Serves 4 | Prep Time: 5 minutes | Cook Time: 10-15 minutes
This a great method and simple way of getting flavor in your carrots. Goes great with some steamed black rice and harissa chicken thighs.
Ingredients
- 6 carrots, peeled and until into obliques
- 2 tablespoons butter or ghee
- 1 tablespoon honey
- Kosher salt to taste
- 1 teaspoon freshly grated turmeric or 1/2 teaspoon ground
- 1/2 teaspoon ground cumin or coriander (optional)
- 1 cup chicken stock, vegetable stock/ or water
- 1/2 cup of chopped cilantro ( if you have fresh mint, that would work too)
- 1 tablespoon toasted sesame seeds
- Orange zest

Any leftover go grate into lentils or a grain bowl the next day.
Preparation
Step 1
Heat a skillet over medium heat. Add the butter, honey and carrots; season with salt. Add the spices if using and cook for another minute. Add the stock or water and bring to a simmer. Cover with the lid slightly ajar and allow to braise for about 10 minutes. Remove the lid and allow the liquid to reduce until the carrots look glazed. At this point there should be just enough liquid canvasing the skillet.
Add in the cilantro, sesame seeds and orange zest. Taste for seasoning. Serve immediately.
