Black Sesame & Flax Seed Crackers

Serves 4  | Prep Time:10 minutes (plus 30 minutes) | Cook Time: 1hr plus

Sesame seeds are a great source of calcium, magnesium and vitamin E, while flaxseed provide a great source of protein. Can you say that about your crackers?

Ingredients

  • 1 cup flax seeds, ground
  • 2 tablespoons chia seeds
  • 1½ tablespoons black sesame seeds + more for sprinkling on top
  • 1½ tablespoons white sesame seeds + more for sprinkling on top
  • 1 tablespoon dulse flakes (or ground nori)
  • 1 teaspoon sea salt
  • 2 cups filtered water

Chef Tips

The crackers can be rehydrated if they seem to have lost their crispness. But consume within a week for maximum freshness. 

Preparation

Step 1

In  a medium mixing bowl add ground flax seeds, chia seeds, sesame seeds, dulse flakes, sea salt and water. Whisk well until completely combined. Allow to sit for 30 minutes and then whisk again. This waiting period is needed to allow the water to soften the seeds

Step 2

Preheat oven to (175F) Set up 2 baking trays (18×13) with parchment. Divide the flax mixture onto the trays. Spread the flax mixture into a thin layer as evenly as you can (about 1/4-inch). I like to use an offset spatula, but use what you have on hand. Sprinkle generously with more sesame seeds.

Step 3

Place the trays into the oven and bake for about 1 hr. If you want a straighter looking cracker pull out the trays when the dough is still a bit soft and cut into desired shapes. Then place back on the trays and bake until crisp. They’ll stay crisp in an airtight jar for up to a week.
