Beans And Greens

 Good toasty bread with some beans and greens is a humble dish to know. Nourishing, quick and inexpensive.

Ingredients

  •  1/4 cup (60g) extra virgin olive oil + more for the bread
  • 4 cloves garlic, thinly sliced
  • Pinch of red pepper flakes
  • 2 cups bone broth/or vegetable stock (I like Kettle &
  • 2 bunches lacinato kale, chops (ribs removed if desired)
  • 1 cans chickpeas or white beans, rinsed and drained

  • Really good country (sourdough) bread
  • Parmesan cheese for grating

Good toasty bread with some beans and greens is a humble dish to know. Nourishing, quick and inexpensive.

Preparation

Step 1

Heat a Dutch oven over medium heat. Add the olive oil, garlic and chili. Take in the aroma and amazing smells. Cook it until light golden brown. Add in the bone broth and bring to a boil. Drop in the greens and beans; partially cover and cook until the greens are just wilted. About 3-4 minutes. Taste the broth and season with salt and freshly ground black pepper. Keep warm.

Step 2

Slice some bread, drizzle with some olive oil and grill or toast until golden brown. Place in a bowl and laddle in some of the beans and greens. Drizzle with some olive oil and shower with parmesan.
