Arugula salad + Shaved Fennel, Celery, Pistachio’s, Lemon Vinaigrette And Parmesan

Serves 4  | Prep Time: 12 minutes | Cook Time: 15 minutes (for the protein)

Simple, elegant and easy for a beautiful salad. Serve with a nice steak or fish.

Ingredients

  • 5 oz arugula (about 1 clam shell)
  • 1 head fennel, shaved on a mandolin
  • 2-3 stalk celery, thinly sliced
  • 1/4 cup toasted pistachios
  • Wedge of parmesan

For the lemon vinaigrette

  • 3 tablespoons fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • Kosher salt and freshly ground black pepper

Chef Tips

Goes great with a pan roasted salmon or steak. Perhaps some hard cooked eggs too.

Preparation

Step 1 (for the lemon vinaigrette)

Place lemon juice, olive oil, salt and pepper in a small bowl and whisk. Alternatively, place in a jar and shake to combine. Taste for seasoning.

Step 2

Place arugula, fennel, celery and pistachios in a large bowl. Season with a few tablespoon of vinaigrette, salt and freshly ground black pepper. Toss gently to combine. Taste for seasoning. Shave parmesan right over the salad to your hearts content. Or place into a nice bowl and shave liberally. Finish with a little more freshly ground black pepper
