Apple Bok Choy Salad

A unique pairing of apples and bok choy does not go unnoticed. The dressing is oil free, as all the fat comes from the nut butter. This has been adapted from fullbellyfarm.com
Ingredients
- 6 cups finely chopped sliced bok choi (picture what cabbage looks like in coleslaw)
- 1 large apple, shredded (like green or pink lady)
- 1 large carrot, shredded
- 1/2 red onion, medium diced
- 1/2 cup unsweetened almond milk
- 1/4 cup raw cashew butter
- 1/4 cup balsami vinegar
- 1/4 raisins
- 1 teaspoon Dijon mustard
- Kosher salt to taste
Chef Tips
Try adding some sriracha if you want some added heat.
Preparation
Step 1
Combine bok choir apple, carrot and onion in a large bowl.
Step 2
In a high powered blender, combine the almond milk, cashew butter, vinegar, raisins and mustard. Blend until smooth. Season with salt. Add desired amount to the chopped vegetables
