Adobo Sheet Pan Chicken + Lemony Romanesco
Serves 4 | Prep Time: 15-20 minutes | Cook Time: 30 minutes
This is a bright and flavorful using basic pantry staples like sherry vinegar, garlic and paprika). The romanesco gets a unique seasoning with the secret ingredient: cashew butter. All of it gets cooked on one sheet tray. I like adding a big green salad to this as well.
Ingredients
- 4 chicken thighs (bone in/skin on is my preference, but you choose)
- Kosher salt to taste
- 2 teaspoons smoked paprika
- 1 tablespoon (12g) sherry vinegar
- 3 tablespoons (45g) extra virgin olive oil
- 2 cloves garlic, micro planned
- To serve: lemony romanesco (see below) and a big green salad
(For the lemony romanesco)
- 1 head romanesco, cut into eight wedges (if the head is small get two)
- 1/4 cup (60g) cashew butter
- 2 tablespoons (30g) water
- 2 tablespoons coconut oil, melted (or olive oil)
- 2 teaspoons ground coriander
- 1/4 teaspoon ground turmeric
- 2 cloves garlic, micro planned
- Zest and juice of 1 lemon
- Kosher salt and freshly ground black pepper
Substitutions:
Chicken – use any cut you love
Romanesco – broccoli or cauliflower
Chef Tips
If you have some fresh oregano in the fridge at it to the chicken in step 1. But didn’t want you to buy for 1-2 tablespoons.
Preparation
Step 1 (for the chicken)
Preheat oven to 425F. Season chicken thighs on both sides with salt. In a large bowl combine the smoked paprika, sherry vinegar, olive oil, garlic and oregano. Stir to combine. Add in the chicken and toss to coat; allow to sit while you prepare the romanesco.
Step 2 (for the romanesco)
In a bowl, combine the cashew butter, water, coconut oil (or olive oil), coriander, turmeric, garlic, and lemon. Whisk to combine. Toss in the romanesco coat with the cashew butter mixture; season with salt and freshly ground black pepper.
Step 3
Set up a baking tray covered with parchment. Lay out the romanesco in one single layer. Nestle in the chicken and roast until the chicken is cooked through. About 20-25 minutes. Feel free to squeeze a little lemon juice on the chicken as it comes out of the oven. Serve immediately.
